It's kinda easy to do, next time u go edit a pic, choose to "customize" the Grayscale effect. When it comes up, change the type to "focus" and then select the polygon shape. Then just mark out the areas on the picture you want to make black and white, and then hit apply.

This is a picture of a cheetah that I used to demonstrate how you can make a selected part of a picture remain in color while the remainder of the picture is black & white.
